Hello! I made some coffee cupcakes today :) Some with a coffee buttercream, and others with a "Baileys with a hint of coffee" buttercream! All topped with chopped nuts and dark chocolate - rather yum ;)

I intended to make just a chocolate mousse cake.

Ended up having too much batter, so I used up the extra to make cupcakes.

They turned out yummier than expected!

I made these for a baby shower for a friend who didn't want a "goo-goo gaga" feel for her little one. She said she was having a "Baby Diva" and insisted on absolutely no pink!

So of course I had to glam them up a bit...

Wow, I just can't stop today. I had some left over buttercream from my White Velvet Butter Cupcakes and seemed to be on a roll. While these are technically brownies, I baked them in a mini-cupcake tray and gave them each a rosette of the buttercream frosting and they came out pretty tasty. Enjoy!
